Chicken Sopas Recipe


Ingredients

  • 3 tablespoons butter or cooking oil
  • 1 medium sized onion, chopped
  • 4 cloves of garlic, minced
  • 2 cups deboned chicken, flaked or diced (chicken leftovers are good too!)
  • 4 cups chicken broth
  • 2 cups elbow macaroni 
  • 3/4 cup celery, chopped 
  • 3/4 cup carrots, diced 
  • 3/4 cup cabbage; shredded 
  • 1 cup fresh or evaporated milk 
  • 1 cup water 
  • 2 tbsps fish sauce (or more)
  • salt and ground black pepper to taste 

Cooking Procedure

  1. Heat oil or butter in a cooking pot, and saute garlic and onions. 
  2. Add the boneless chicken and cook for 3 to 5 minutes. 
  3. Add the fish sauce and stir. 
  4. Pour in chicken broth and water bring to a boil. 
  5. Add the macaroni pasta and cook for 5 to 8 minutes or until pasta is half-cooked. Stir so the pasta don't stick together 
  6. Add the carrots and celery and simmer for 3 minutes. Then, add the cabbage. 
  7. Pour in the milk and cook for 2 to 5 minutes more or until the pasta is al dente (firm to the bite).
  8. Season with salt and pepper. 
  9. Turn-off the heat and transfer to a soup bowl. 
  10. Serve hot. Also best served with croutons or crackers. Enjoy! 

Tips

  • You can also add diced hotdogs, luncheon meat, or green beans.
  • You can boil bone-in chicken to make chicken stock. Then, remove the meat from the bones manually
  • Even after the heat has been turned off, the macaroni will continue cooking in the hot soup. The pasta will also absorb the liquid as it cools, if left sitting in stock. In this case, simply add stock and water again when reheating. You may need to add fish sauce or salt again depending on your taste preference.
  • Best served during rainy or cold season
